Summary

Sure to be a favourite with the kids and adults alike! These Chocolate Gingerbread Cupcakes look the business and taste amazing too. How cool is the icing?!

Instructions

1.) Preheat the oven to 160C.
2.) In a bowl, combine the dry ingredients. Add the wet ingredients and mix/blend until smooth.
3.) Divide between 6 large silicone cake cases and bake for 22-25 minutes.

Icing:

1.) Mix greek yoghurt and truvia to taste.

Web Effect:

1.) Mix 1 tbsp cocoa powder, 1 tsp truvia & 1 tbsp water to a paste.
2.) Microwave for a few seconds, stir and leave to cool.
3.) Pipe concentric circles on top of the greek yoghurt and drag a cocktail stick through the circles.

30g (6tbsp) Chocolate Milk Protein

12g (4tsp) Coconut Flour

6g (2tsp) Reduced Fat Almond Flour

12g (2tbsp) Cocoa Powder

100ml (6tbsp +2tsp) Egg White

30-45ml (2-3tbsp) Sugar Free Gingerbread Syrup

45ml (3 tbsp) Almond Milk

1/2tsp Cinnamon

1/2tsp Ground Ginger

5 tsp Truvia

1 1/2 tsp Baking Powder
