Get your knashers around this savoury delight. A Double Sweet Potato Rosti recipe with high quality carbs and fats. Great as a tasty snack with a cup of Complete Protein Coffee


1.) Grate your sweet potato. I used a food processor to do this, for speed. Place your grated sweet potato in a bowl and cover with a plate. Microwave on full for 2 minutes. Give it a stir and blast for another 2 minutes.

2.) In another bowl, beat together the remaining ingredients. Add to the sweet potato and mix well until combined. Leave to sit for a couple of minutes.

3.) Heat a non stick frying pan to high heat. Add a smidge of coconut oil. Spoon in your mixture and turn the pan down to medium. Cook for a minute or so, flip over and continue to cook until done. Repeat until the batter is used up.
