How to make protein pancakes

It’s nearly that time of year again. The only day when it’s absolutely acceptable to eat the same meal all day. Pure, unashamed indulgence. Get ready to pile them high for Pancake Day on the 21st February. So are your taste buds ready for a treat? Here are the only protein pancake recipes you’ll need to know this year as we show you how to make protein pancakes.

1. Protein pancake recipe – mini bites

Ingredients

For the pancakes:
4 scoops (100g) Vegan Protein Pancake Mix
100ml water
2 ripe bananas
1-2 tbsp Organic Virgin Coconut Oil (for frying)

For the peanut butter sauce:
3 tbsp Powdered Peanut Butter
2.5 tbsp Oat Drink
2 tsp Maple Syrup Zero Calorie Syrup™

How to make protein pancakes

  • Mix the pancake mix and water to a smooth, thin batter. 
  • Slice the banana into thin discs, then dip them into the batter to coat. 
  • Heat the coconut oil in a large frying pan over medium heat, then fry each banana bite for a minute on each side or until golden brown.
  • Combine the ingredients for the peanut butter sauce. Drizzle this over the pancake bites.
  • Tuck in.

2. Blueberry Protein Pancakes

Blueberry pancakes. An absolute classic. Here our resident foodie expert, Nadia, presents a simple, tasty blueberry protein pancakes recipe for you to try out using our new and improved Protein Pancake Mix. An excellent option for those looking for American-style, fluffy pancakes in minutes. 

 

Ingredients

  • 4 scoops Blueberry Protein Pancake Mix
  • 200ml water/ milk
  • 100g blueberries
  • 1 tbsp coconut oil
  • Maple Syrup Zero Calorie Syrup™

 

Method

  • Mix the Protein Pancake Mix and water in a bowl. Fold in the blueberries. 
  • Heat a little oil in a pan. Fry a large spoonful of the mixture on medium heat for 1-2 minutes on each side, until lightly browned. Repeat with the remaining mixture.
  • Serve with a drizzle of syrup.

3. Banana protein pancake recipe

This protein pancake batter keeps it simple. With all the usual ingredients combined and two scoops of whey protein, it leaves room for you to play around with toppings. The perfect way to enjoy a delicious treat while still hitting your nutrition goals.

Ingredients

  • One banana
  • 2 scoops of protein powder
  • 2 eggs
  • 1/2 tsp of baking powder
  • 1/2 a cup of oat milk
  • A dash of cinnamon

 

Method

  • Blend your ingredients together
  • Pour carefully into a non-stick pan to form small circles
  • Flip once small bubbles appear on top
  • Stack, top and enjoy.

4. Cookies and cream protein pancake recipe

If you want a protein pancake recipe with no banana, here’s a great option. Joanna’s recipe uses our Chocolate Cookies Pure Whey Protein™ topped with melted Protein Chocolate. She also includes Protein Biscuit drizzled with Chocolate Caramel Zero Calorie Syrup™. How high can you pile yours?

 

Ingredients

For the pancakes:
30g Chocolate Cookies Pure Whey Protein™
55g self-raising flour
150ml unsweetened almond milk
1 tsp baking powder
Organic Virgin Coconut Oil, for cooking 

For the toppings:
MACRO MUNCH™ Protein Chocolate
2 x Cookies & Cream MACRO MUNCH™ Protein Biscuits
Chocolate Caramel Zero Calorie Syrup™
0% fat Greek yoghurt

Method:

  • Mix all pancake batter ingredients (except the coconut oil) in a blender.
  • Fry the pancake batter over medium-high heat using the coconut oil for 30 seconds – 1 minute on each side, or until golden. Repeat with the remaining batter.
  • Arrange the pancakes with greek yoghurt between each layer on your plate.
  • Top with the biscuits and drizzle over the melted chocolate and syrup.

 

5. Biscoff protein pancakes

Joe Delaney is an expert protein pancake maker, so we asked him to whip up another delicious recipe for us. Incorporating the ever-popular Biscoff biscuit spread, this is another winner.

Ingredients

  • 75g oats
  • 30g protein powder 
  • 60ml egg whites
  • 100g fat-free yoghurt
  • 1/2 tsp bicarbonate of soda
  • 1 dollop of peanut butter
  • Biscoff spread
  • 1 banana

 

Method:

  • Mix all pancake batter ingredients into a blender in this order: egg whites, oats, peanut butter, yoghurt, protein powder and bicarbonate of soda.
  • Blend them up.
  • Fry a ladle of the pancake batter over medium-high heat for around 30 seconds on each side.
  • Repeat with the remaining batter.
  • Cut up a banana into slices and melt some Biscoff (in a microwave or a frying pan).
  • Pile up the pancakes, then top with banana and drizzle over the melted Biscoff.
